Set up the brew
Use potable cold water, a clean food-safe container and tea without stale or contaminated odor. Start with 5-8g per litre; dense rolled leaf may need more time than open, broken leaf.
Method, step by step
Combine tea and water, cover and refrigerate immediately. Taste after four hours, strain when balanced, keep chilled and consume promptly. Do not leave the bottle warm for prolonged periods.
How to adjust by taste
If weak, extend time or add leaf next batch. If flat, try water with moderate mineral content. If harsh, strain earlier rather than diluting a repeatedly over-extracted brew.
Practical guidance
Try 6g of jasmine tea or light oolong in one litre of water for six hours in the refrigerator, then strain.
Identification and caution
Cold water does not sterilize tea. Use clean equipment, refrigerate throughout and discard the brew if smell, appearance or handling raises doubt.
