Choose clean whole leaf that does not become harsh too quickly. Use slightly less leaf than for a fully decanted pot, and leave enough cup volume for cooling and refilling.
Method, step by step
Add leaf and water, wait until drinkable, then sip from the top. Refill when one-quarter to one-third remains so the concentrated lower layer blends with fresh water. Repeat until flavor is exhausted.
How to adjust by taste
If the bottom becomes bitter, refill earlier, use cooler water or reduce leaf. If every refill tastes watery, add slightly more tea or wait longer before the first sip.
Practical guidance
For Longjing or Huangshan Maofeng, begin with 2g in 250ml at about 80°C and refill before the leaves are exposed to air.
Identification and caution
This method is less suitable for teas that release strong bitterness quickly or for very broken leaf. It is not a universal substitute for decanting.
