How to use it

Hold the saucer or rim, shift the lid to create a narrow filter gap and pour decisively. Use less water than the brim to reduce spills, and practice with cool water before handling boiling tea.

How to choose one

A 90-120ml white porcelain gaiwan with a flared rim, stable lid and comfortable knob is an excellent first choice. Check that the lid moves smoothly and the bowl pours without dribbling.

Cleaning and care

Rinse promptly, wash with a soft sponge and mild unscented detergent when needed, and dry fully. Porcelain does not need a permanent tea stain to become seasoned.

Practical guidance

Begin with a 100ml gaiwan and 5g of tea. Practice five complete pours using cool water until the lid position and grip feel natural.

Identification and caution

Very thick walls, a flat rim or an oversized bowl can make a gaiwan unnecessarily hot and difficult. Decoration matters less than fit and pour.
