Sun-dried maocha is moistened, piled, turned and monitored for heat and humidity, then dried, graded, blended and sold loose or compressed.
Aroma, taste and texture
Clean ripe tea may show wood, jujube, cocoa, grain, nuts and smooth earth without fishy, sour or moldy odors.
Practical guidance
Use 5-7g per 100ml with boiling water; a brief rinse can help open compressed leaf.
Identification and caution
A fishy smell is not an authentic marker. Look for clean fermentation, batch information and post-fermentation resting.
